|
The final pasteurization of a packed product is the best guarantee of its hygiene and keeping time. The modern plastic materials for packaging are hardly compatible with steam or hot water. A hot-air treatment is the best solution, but it must be an efficient and homogeneous system.
GGE has produced a highly effective and low cost system of air circulation in a static oven, which is able to keep the internal temperatures homogeneous, with very little difference between the upper and the lower part.
Ideal for the pasteurization of: fresh pasta; pre-cooked pasta; ready-to-serve dishes; baker’s wares; pizza and many other products.
The oven is made up of a stainless steel AISI 304 sheeting panels box with polyurethane (outside) and mineral wool (inside) insulation.
All the electric and hydraulic materials used are of first quality and comply with the standards in force.

| FOREN, operating principle |
Air is conveyed by a high efficiency centrifugal fan through a closed circuit.
During this course, air crosses the electric resistances (Foren/EL) or the steam batteries (Foren/VAP), so that it’s heated at a temperature which has been previously set by the operator by means of an appropriate heat regulator situated on the control panel (Tmax = 96 °C).
The oven can guarantee the maximum internal temperature homogeneity thanks to a particular air suction and a delivery system controlled by special electro-pneumatic gates which reverse the direction of air rotation, at regular pre-set intervals.
In this way the products placed in the oven space can, gradually and uniformly, reach the pre-set temperature and maintain it for a determined time.
The whole process is controlled by an appropriate PLC, with an electric panel. |
